Broccoli fried rice

Welcome to another simple blog. It is the time for Broccoli fried rice.
Usually when we eat fried rice in restaurants, it is very oily. So it's better to make it at home as we have control over the oil and salt we use.
This is a simple recipe with ingredients easily available at home and the broccoli can be replaced with any other vegetable we have in hand.
Let's see the ingredients first
Ingredients:-
Basmati rice - 1 cup
Broccoli - 1/2 flower
Colour capsicum - 1 chopped
Spring onion- 1 chopped
Ginger - 1 inch
Garlic - 4 pods
Black pepper - 1 tbsp
Soya sauce -1 tsp
Tomato ketchup -1 tbsp
Salt
Oil
In a mortar and pestle, pound ginger, garlic and black pepper into a very coarse paste.
Blanch broccoli in hot water with turmeric powder.
In a kadai, add oil. Once it is hot add spring onion,ginger garlic pepper paste . Now add the chopped capsicum and the blanched broccoli.
Fry all these with salt in a high flame. Once it is cooked a little, add soya sauce and tomato ketchup. Mix it well . In the high flame, all the vegetables will shrivel a little.
In the meantime, boil basmati rice in water with salt.
Add the cooked rice to the mix that is already cooking. Mix it well so that all rice grains are coated . Let it cook in low flame for 5 minutes.
Switch the flame off and serve it hot after garnishing it with spring onions.
Some important tips
Please be careful with the salt , as we add it two times ,once for the rice and the other time when sauteing. Soya sauce also has salt. So always start with small amount of salt. You can always add it just before serving.
Also replace broccoli with your favourite vegetable.
If you feel it is not spicy enough , either add chilli flakes to it or add 1 tsp chilli sauce when sauteing.
I used colour capsicum as broccoli is already green.
