Broccoli paratha

Hi friends,
Welcome to another blog.
Today it is broccoli paratha. I tried broccoli first time around 14 years ago that too in the form of paruppu usili.
Few years back it was not available easily. Nowadays it is found even in small vegetable shops. I get it everytime it is available and use it for fried rice, biryani, pasta or soup.
I am big big fan of parathas . According to me, any vegetable, literally any vegetable can be turned into a lip smacking paratha.

So what better idea than to make broccoli parathas for a weeknight dinner.

Let's get to ingredients

Ingredients
  • Wheat flour - 2 cups
  • Broccoli - 1 small grated
  • Ginger (grated) - 1/2 inch
  • Green chilli (finely chopped) - 1
  • Onion - 1 grated
  • Coriander powder - 1 tsp
  • Red chilli - 1/4 tsp
  • Cumin seeds - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Coriander leaves - 1 to 2 tbsp
  • Dry mango powder - 1/4 tsp
  • Garam masala - 1/4 tsp
  • Salt - 1 tsp

In a bowl, make paratha dough with wheat flour and salt. Make that into a soft dough and leave it aside for 10 - 15 minutes.

In a kadai ,add a Tsp of oil . Add jeera. Once it is fried, add grated ginger, grated onion and fry for a minute. Now add the broccoli, green chilli and salt. After a minute, add all the spice powders. In 2 minutes, the filling will come together and will be a little dry. Remove it from flame and keep it aside to cool.

Take a round ball of dough and roll it into a small circle. Take some filling and keep it in the centre of the small roti and fold. Now roll it into a normal paratha.

Heat a tava on medium flame. Once it is hot add ghee. Cook the paratha on one side till brown spots appear. Similarly do it the other side.

Once brown spots appear both sides, remove from flame . Serve it hot with curd and pickle.

This method of doing paratha will definitely be a part of your daily cooking. It is so delicious and filling.

The same way can be used to cook gobhi paratha too.

Please try and let me know.
