Easy and simple fried rice

Today's special is a fried rice that can be prepared in a jiffy. It is a wonderful tiffin box recipe. It can be done on a day when we are too lazy to cook. I learnt this from a friend about 13 years ago.
INGREDIENTS:-
- Basmati rice :- 1 cup
- Chopped carrots :- ¼ cup
- Chopped beans :- ¼ cup
- Chopped spring onions :- ¼ cup
- Ginger :- small piece
- Crushed black pepper :-1 tsp
Cook basmati rice in 2 cups of water. Let the rice grains be separate. In a kadai put a tbsp of oil and fry the grated ginger. Fry the three vegetables till it gets cooked. Vegetables should be still crunchy. Add crushed black pepper. Mix well. Also add cooked rice to it and toss it well. Flavorful fried rice ready.Some tips:-
On this particular day I didn't have spring onions so I just sauteed thinly sliced onions with ginger and did everything else the same. So onion too works .
It can also be made with whatever rice we are comfortable with. But basmati gives it added flavor.
It is masala free and easy.
To make it a combo meal ,we can make gobi manchurian to go with it.
