Mexican rice
Hi friends,
Hope you are all safe and sound. As a pucca south Indian, I have atleast rice once a day. Usually its during lunch.
One problem all ladies have is,what to pack for lunch box for kids and husband. If she is working, even more tough as time in hand will be very little.
If you are bored with regular rice varieties, try this Mexican rice.
It is the most easiest and flavorful rice that can be had for lunch. This tastes good at room temperature.
INGREDIENTS:-
Basmati rice - 1 cup
Oil - 2 tbsp
Mixed vegetables - 1 cup
Garlic - 4 pods
Salt
Chilly flakes
Let's get to the recipe
Soak basmati rice for 15 minutes and rinse it till water runs clear.
Add oil in the pan and fry the chopped pieces of garlic. Once it is fried, add drained rice and roast it well. Roast till rice turns fragrant and changes into light brown. This step is very important.
Once rice is roasted well, add vegetables, salt and fry for 2 minutes.
Add required water and cook the rice till it is just right.
Add chilli flakes and toss the rice once or twice.
Your Mexican rice is ready.
I have added onion, red capsicum, green capsicum, yellow capsicum, carrots.
We can add corn, peas and any vegetables we have in hand.
Kids will love this recipe as it looks very colorful and at the same time very mild in taste.
