Appam & Set dosa
Hi friends,
This is the time for another dinner recipe. Everyday , after a full day's work deciding upon a dinner is sometimes tiresome.
Generally, to make it easy we make idlis or dosas. But after a certain point of time,it too becomes boring.
To make it interesting, every time I grind idly batter ,which is a weekly chore, I grind and keep 3 or 4 batters ready.
One such batter is this , Appam batter . This is also a set dosa batter.
This batter doesn't have coconut milk or yeast or eno.
It is a simple recipe.
Ingredients
Raw rice -1 cup
Idly rice -1 cup
Urad dal -3 tbsp
Methi seeds - 1 tsp
Salt
Soak raw rice , idly rice, urad dal and methi seeds together in a wide bowl for a good 4 -5 hrs.
Grind the soaked rice in the grinder into a smooth paste with salt.
Keep it separately to ferment for atleast 8 hrs.
After 8 hrs, it would have doubled. Mix it lightly and make it into appam or set dosa.
To make Appam
Take the batter and slightly thin it down. It shouldn't be too watery and not too thick. To get the coconut milk taste ,now would be the right time to use it to thin down the batter.
Take a aappa kadai and slightly brush it with oil. Once kadai is slightly hot , add a good ladle of batter to the middle and swirl the batter in the kadai so that batter reaches everywhere in the kadai. The corners must be thin and the center must be spongy. Cover the kadai and cook for 3-4 minutes in a low flame. In high flame the corners get cooked fast but center will be uncooked. So this should be cooked in a low flame only.

To make set dosa
Take the batter and mix it slightly. Take dosa tava and spread it with a little bit of oil. Once slightly hot, add the batter to the center of dosa tava and spread it lightly. We need the batter to stay thick. When it starts cooking, you can see some bubbles at the top. Cook this in a low flame till the top also gets cooked. If needed, flip the dosa to cook.
Once cooked, remove and serve it hot with chutney, sambar or kuruma.
