Vegetable stew

Hope everyone is fine. I am back with one of my go to recipes after a long time.
This time it's vegetable stew.
Usually stew is made with lots of vegetables, coconut oil and coconut milk. But, this is a recipe that uses a replacement for coconut milk.
It's milk with a little bit of sugar. Yes, you read it right, this will taste just as awesome as the authentic one.
Ingredients
Mixed vegetables - 2 cups
Onion -1 cut into thin strips
Green chilli -2 slit length wise
Garlic -3 cloves
Cinnamon -1
Cardamom -2
Clove -2
Milk -1/2 cup
Salt
Sugar
Curry leaves
In a kadai, add oil. In the hot oil, add cardamom, cinnamon and clove. Once it is fried a little,add onion and garlic. Saute it till onion gets translucent in a low flame.
Now add chopped vegetables and salt. Sauté it for a minute. Add half a cup of water. Cook the vegetables till it is just right.
Once vegetables are cooked, add milk and half a tsp of sugar. In a low flame, simmer the gravy for 2-3 minutes.
Tasty vegetable stew is ready. Garnish it with curry leaves fried in coconut oil.
Serve it hot with Appam, Idiyappam.
Some tips
In the authentic version, vegetables are cooked in thin coconut milk and topped with thick coconut milk . So please go ahead and try this with coconut milk too.
For extra spiciness, add 2 more slit green chillies.
For a yellow stew, add turmeric powder.
It can also be made with a single vegetable. A simple potato stew also tastes amazing.
