Simple one pot vegetable kuruma

Everyone of us love to have chapati and kuruma once in a while. When I was small, I used to wait for my grandmother to make that. It was made rarely. But worth waiting for. Even then it was not kuruma in the traditional way . It was her own method without garlic, coconut. Chapati was made daily for my grandfather but no special side dish for him. He was happy with whatever he was given.
Our way of chapati is plain phulka. Just plain atta and water. Not even salt. Still I am making in that way. When guests come, I just add salt. Still no oil.
Now coming back to kuruma, we see various versions where there are roasting, grinding and chopping. I personally prefer things that taste homemade than restaurant taste. I don't want to have rich, greasy, masala laden food at our home daily. We can have those once in a while at restaurants.
My mother in law is an expert in traditional tirunelveli tambrahm cooking . She too rarely makes kuruma. But the method she uses is very simple and fast. It's a one pot method. So I thought to make it when I was too tired to cook.
INGREDIENTS:-
Mixed vegetables :- 2 cups
Onion :- 1
Tomato :-1
Turmeric powder :-1/2 tsp
Chilly powder :- 1 tsp
Salt :- to taste
Garam masala :-1 tsp
To grind
Coconut :- 2 tbsp
Fried gram :-1 tbsp
Garlic :- 2 pods
Take a kadai. Add vegetables, onion, tomato, turmeric powder, chilli powder in some water. Add the ground paste. Add salt and garam masala. Cook it for 10-15 minutes till vegetables get cooked. Once vegetables are cooked, add coriander leaves as garnish and remove from gas.
As you can see I have not used any oil.
Alternatively ,we can cook this in pressure cooker too. Add everything in a vessel and cook for 2 whistles.
For added flavor ,we can temper cinnamon, cardamom, Bayleaf in oil and pour on top of kuruma.
This is the most simple method of kuruma. It tastes great too. It is a good recipe that can be used on weekdays.
Even novice cooks can do this with ease.
