More kuzhambu - 10 minute recipe

Today back to basics. One of my most favourite dish. 

More kuzhambu or gravy made with buttermilk is usually present in the wedding menu and guest menus. Also it's made when there is a little extra curd at home.


This particular recipe doesn't need any roasting. This can be done from start to finish in 10 minutes.


In a kadai, add oil. Once hot, add a tsp each of mustard seeds and methi seeds and a pinch of hing.


Once crackles, add curry leaves and chopped ladies finger. Fry it for a few minutes till it's well cooked.



In the meantime, grind 1 half of a coconut grated with green chilli and a tsp of jeera. Grind it into a paste.


Mix 1 cup of thick curd with a tsp of turmeric powder and a little salt well.


Once ladies finger is fried, add the curd mixture . Once it starts boiling, add the ground mixture.





Once it starts foaming around the edges, switch off the gas. Don't let the kuzhambu boil.




Serve it hot with rice and potato fry. Paruppu usili goes well with this. Also it goes well with pitlai and appalam.
