Vegetable semiya upma

Welcome to another blog. Today it is the time for one more upma recipe.
When small, I didn't like upma varieties at all . But when you become a mom, basically you do the same thing what your mom did right? 😉😉😉. I too started making upma. But to make them interesting, I added a lot of vegetables. Now, it is a dinner I make when I am tired.
So let's go to the ingredients
Semiya roasted - 200 gms
Onion -1 chopped
Tomato -1 chopped
Vegetables - 1 cup
Ginger - 1 inch chopped
Green chillies -2 chopped
Curry leaves
Mustard seeds, urad dal ,channa dal - 1 TSP
In a kadai , add oil. Once it's hot, add Mustard seeds. Once it crackles ,add channa dal and urad dal. Let it brown a little.
Now add green chilli, curry leaves,and ginger. Let it cook for a minute. Now add chopped onions and fry it well.
Once onion becomes translucent, add tomatoes. After tomato cooks, add chopped vegetables. I have added 1 potato, 1 carrot and 6 beans.
Fry it for 2 minutes. Now add water around 2 cups. Let it boil .
After it comes to a rolling boil, add the roasted semiya or vermicelli to it. Immediately bring the flame to medium.
Now close the kadai and let the vermicelli cook for around 7-8 minutes. In the meantime, even vegetables would have been cooked.
After 7 minutes, your tasty vegetables vermicelli upma will be ready . It tastes great with chutney.
Some points
Store bought roasted vermicelli can be added or we can roast vermicelli at home with little oil . Roast till it is hot to touch.
Add water,as it is needed. If you add more water , the upma will become a gooey mess. If needed, we can add water in the middle.
