Paneer Bhurji and curry

Welcome to another blog . This is another one of my quick fix for side dish for dinner.
According to me, Paneer Bhurji is the most simplest and quickest side dish for chapati, phulka or jeera rice.
Here , I have shared a basic gravy which I have used to make 2 kinds of paneer dishes.
One is Paneer Bhurji and the other is a simple paneer curry.
Let's jump to the ingredients
Ingredients
Onion - 4 medium chopped
Tomato -3 medium chopped
Ginger - 2 inch chopped
Garlic -6-8 pods
Paneer - 2 200 gm packs
Salt
Turmeric powder -1 TSP
Chilli powder -1 TSP
Coriander powder - 1 TSP
Garam masala - 1 tbsp
Oil
Jeera - 1 TSP
Kasuri methi - 1 TSP
Grate 1 pkt of paneer in a large grater .
In a deep kadai, add oil. Add jeera and once it splutters, add onion, ginger and garlic. Fry it well till it becomes translucent. Now add tomato and fry it well .
Once it is cooked, add turmeric powder, chilli powder and coriander powder. Mix it well after adding salt.
After 4-5 minutes,onions and tomatoes get mushy. At this stage ,add garam masala powder and mix well.
Since I made 2 subjis that day, I took half of the gravy out.
In the kadai, where some gravy is left add the grated paneer and mix well. Add a little water to bring everything together.
The paneer which I used was a little soft, so it literally melted into the gravy. Add a pinch of kasuri methi.
Now switch off the flame and garnish it with coriander leaves.
Serve it hot . You can also serve it like a gravy by adding a little hot water to adjust it's consistency.
Second curry
In the remaining half of the gravy, I added a half cup of water.
Once it starts boiling, add chopped paneer pieces and cook it till all the paneer pieces are coated with the masala.
Switch off the flame after adding kasuri methi, and it reaches a semi dry consistency.
Garnish with coriander leaves and serve it with roti, phulka ,rice .
This takes hardly 10-15 minutes. And it will be loved by both kids and adults alike.
