Vegetable sevai - rice vermicelli with vegetables

Hope everyone of you are fine and good. Today I am here with a very healthy recipe.

It's the time for sevai - rice vermicelli.


The traditional method of grinding batter and steaming the batter and then squeeze through the equipment is a long process. But it is definitely special. That method is for the weekends or for a small group of people.

For 3 or 4 people,I prefer the instant rice vermicelli that comes in packets.

This is a healthy recipe and quick too and is a perfect weeknight dinner.

Ingredients

Rice sevai instant -100 gms 

Vegetables - 1 cup chopped small 

Onion -1 chopped

Green chilli -1

Curry leaves

Mustard seeds - 1 tsp 

Urad dal - 1 tsp 

Coconut - 2 tbsp grated


Cook the rice sevai as per packet instructions.

One small tip is to close the drained sevai wth airtight cover so as to steam it in its own heat. That makes it absolutely non sticky.





In a kadai, add oil . Now add mustard seeds and urad dal to fry. After that add green chillies,curry leaves and finely chopped onions. Let it get fried well . Now add chopped vegetables and salt .


Cook for a good 7-8 minutes for the vegetables to get cooked and crispy at the same time.


Now add the rice sevai and grated coconut. Toss it well so that everything comes together.

Check for salt and switch off the gas.

Vegetable rice sevai is ready and it tastes good at room temperature.

Serve it with coconut chutney or tomato chutney.


I like to keep this sevai white with little peeking of colours here and there. I have used 1 potato,1 carrot and 4 French beans. You may use any combination you prefer.
