Palak khichdi

When you are too tired or too bored to cook, or when you want something hot and comforting, healthy food to eat without doing too much work , then this is the ultimate recipe for you.
Khichdi is basically like our pongal. Every state has its own recipe and method to make.Now I am sharing a recipe which suits me to make as well as eat.
I have added palak in these and these can be made plain or with vegetables too.
Ingredients
Basmati rice - 1 cup soaked
Moong dal -1/2 cup
Palak -1 bunch
Onion -2 small chopped
Tomato - 1 big chopped
Ginger, garlic - chopped
Turmeric powder
Chilli powder
Garam masala - all 1 tsp
Salt
Ghee
I just made it as one pot rice.
In a cooker, add 2 tsp of ghee . Fry a tsp of mustard,jeera and curry leaves. Add chopped onions,ginger and garlic. Fry for 2 to 3 minutes. Add chopped tomatoes and salt and saute it well . Once its cooked, add dal and soaked rice and saute it for a minute.
If making plain khichdi, add 4 cups of water to it, and cook it. If making with vegetables ,add it now and cook as before.
Since I am making palak khichdi, I added ground palak leaves with just a little water.
Now add 4 cups of water and cook it for 3 to 4 whistles .
Serve it hot with kadhi, curd, papad or even pickle.
It tastes heavenly.
