My version of lebanese recipes

Welcome to another international blog.

I have always wanted to try middle eastern cuisine but I had kept it away as we dont get most of the things here.

Today,being a sunday, I created my own versions of lebanese food made from ingredients available at home.


The recipes I made today are

Pita bread

We had the opportunity to have pita breads when we were in US. It is the perfect pocket food where you can stuff various ingredients. Today I made homemade pita bread with 1 cup of flour ,2 tsp of yeast,salt and sugar . Kept it aside for an hr.

Cooked in a hot tava till it puffs and becomes a pocket.


Mujadara

Heard that it has just three ingredients - lentils,rice and onions. I used tur dal in place of lentils. 

In a kadai, add finely chopped onions and garlic .once it is fried, add salt,lentils and rice. Add required water to cook rice and lentil mixture.  Once everything is cooked, serve it with garnished fried onions and mint leaves .


Tabbouleh

This is a green salad with bulgur wheat .Since I didnt have it. I just boiled broken wheat  and added to a whole lot of green leaves like mint, coriander, green onions and onions. Usually sumac, a spice is added. Instead I added lemon juice and some mixed herbs. Some salt, pepper and chilli flakes to complete it.


Fattoush

This is also a salad with fresh vegetables and herbs with some fried pita breads. I added zucchini, tomato,onion, capsicum,some cabbage.


Baba Ganoush

Roasted brinjal is ground with roasted sesame seeds, garlic, curd, lemon juice with salt, pepper.


Hummus

This is the common dip. Grind soaked and boiled chickpeas with garlic ,roasted sesame seeds,salt, pepper, lemon juice. The most important thing is olive oil.


Shakshuka

Usually eggs are cooked in a sauce made of onion,tomato and garlic. Since we dont eat eggs ,I have used besan batter in place of eggs.


Falafel

This is the ultimate snack food. It can be made whenever needed. Soaked chickpeas is ground with garlic,coriander leaves ,salt ,pepper. Keep in fridge for 10 minutes for the mixture to firm up.

Deep fry or shallow fry in oil.



I know these versions are not authentic. But it tastes a little different to the usual things we cook at home. It is always better to try new recipes with ingredients at home ,instead of getting things which we may rarely use.
