Bhindi do pyaaza

 Hi friends, 

Do you like bhindi / ladies finger. If so this is the perfect recipe for a weekend dinner.

Hot hot phulkas with spicy bhindi ..... Great combo to satisfy your craving for spicy and tasty food.

I remember,when I grew up, most of the kids didn't prefer ladies finger because of its texture. But the current generation loves ladies finger. Anyway, if kids love something which is healthy, it's good right.

Usually I make vendakkai poriyal .I add it for more kuzhambu and make thayir pachadi and puli pachadi with vendakkai.

Today I made bhindi do pyaaza out of it. This is my simple version but still tastes great.


Ingredients

Ladies finger  - 250 gms cut into big pieces 

Onion.              - 1 chopped small 

                             1 kept as petals 

Tomato.            - 1 chopped small 

                             1 chopped big 

Ginger              -  1 inch piece chopped

Garlic               - 2-3 

Green chillies

Curd                 - 1/2 cup 

Jeera

Salt 

Chilli powder

Coriander powder 

Garam masala 

Kasuri methi 



In a big kadai, add a tbsp of oil and slightly fry the big pieces of ladies finger. Once it cooks halfway, remove it and keep aside.


In the same kadai,add little oil and jeera. Once jeera crackles, add finely chopped ginger, garlic and green chillies. Once it cooks a little, add finely chopped onion and tomato to it and fry for 3-4 minutes.


Once onion tomato mixture cooks a little, add salt, chilli powder, coriander powder and mix well. Now add curd and mix well. Cook for 5 minutes till oil comes out from the sides. Once oil oozes out, add fried ladies finger pieces. Mix well till everything coats the ladies finger pieces.

Now close the kadai and cook for 6 minutes in a medium flame. 

After 6 minutes,add onion petals, tomato pieces, garam masala and kasuri methi to it. 

Now again close and cook the mixture for 3- 4 minutes. The onion petals should be crunchy in this recipe.

After 4 minutes, switch off the gas and keep the kadai closed.

Add chopped coriander leaves as garnish.


Serve it hot with ghee phulkas.

A good recipe for potlucks and parties too.
