Onion rava Dosa

Welcome to this blog. I know this title is too familiar. Everyone knows to make rava dosa. What is new there ,you might ask.

Yes, but my method is fool proof . It gets crispy just like restaurants. A crisp onion rava dosa with sambar and chutney is a heavenly combo right.

Lets not waste time .


Ingredients

Rava - 1/2 cup

Maida - 1/2 cup

Rice flour - 1/2 cup

Salt

Chilly

Pepper

Ginger

Mustard seeds

Jeera

Take equal quantities of rava , maida and rice flour and salt. Mix it with 2 cups of water and keep it aside.


After 15 - 20 minutes, rava would have absorbed most of the water. 

Now add temperings. In a kadai, add tbsp of oil , add mustard seeds,jeera,finely chopped ginger, whole black peppers ,finely chopped green chilli and curry leaves one after the other. When all things are fried well, add it to the batter we prepared earlier. Now the batter will be thick.


For rava dosa to be crispy and also be with holes, we need the batter to be watery. Add water till the batter gets thin.


Now in a dosa rava, spread tsp of gingelly oil.

To the hot tava, put some finely chopped onions. Now pour the batter from outside of the tava .The batter will run down to center, now just add little batter to the places where there are big gaps. 


It is better to keep the gas at medium , as since it is thin ,it may become black. Pour oil on the sides of dosa. Once crisp, turn the dosa to the other side carefully without tearing it. Your onion rava dosa is ready.


Serve it hot with chutney and sambar.

One important tip is that every time we ladle the batter, we have to mix the batter well, otherwise rava and other things tend to stay at bottom and there will be just water at the top.
