Yellow pumpkin chutney

Welcome to my blog. Are you a person who makes a lot of idlis and dosas. Then you will understand my difficulty. Everyday thinking of a side dish that is quick,healthy and tasty is a task. We usually have idli milagai podi, which is a staple. Other than the usual, I grind small amounts of coconut milagai podi and garlic podi. Even then we need some chutneys ,sambhar recipes in our arsenal.


One such different recipe is this yellow pumpkin chutney.  I got this recipe idea from agrahara recipes from you tube. I didn't follow the recipe as it is.

INGREDIENTS

Yellow pumpkin       - 200/250 gms

Onion                     - 3

Tomato                  -  3

Green chillies          -  3

Tamarind                -  a small piece

Garlic                     -  4 pods  (mine was very small, so i added a little bit more)

salt

Took all the vegetables in a bowl and pressure cooked with very little water for 2 whistles.


Once cooled , grind all the things together in a chutney jar.
Temper the chutney with mustard seeds, urad dal and curry leaves.

Can the recipe be any more simple.
The slight sweetness of the pumpkin and the chillies gives the chutney wonderful flavour.
