Pav bhaji with homemade masala

Hope everyone is fine. We all have still a long way to go back to our normal routine. Let's hope and pray that it gets better soon.
Now getting back to our blog.
Today I had a craving for chaat. Something spicy and tasty. So decided to do pav Bhaji for dinner. I didn't have pav Bhaji masala powder. Usually, during these times,I add homemade garam masala and aamchur powder and kala namak to make pav Bhaji.
Today i had a little extra time so I made the masala too.
Pav Bhaji masala
Chillies - 15 to 20
Coriander seeds -1/4 cup
Cloves - 6
Jeera - 2 tbsp
Sombu - 1.5 tbsp
Cinnamon - 1 stick
Cardamom - 2/3
Turmeric powder
Aamchur powder - 1.5 tbsp
Kala namak - 1 tsp
Pepper - 1 tbsp
Dry roast in a kadai till its flavourful. Once it cools , grind in a mixie. Pav Bhaji masala is ready. Keep it in airtight container to keep it fresh.
Pav Bhaji
INGREDIENTS:-
Cauliflower - 1 small
Potato - 2
Carrot - 1
Capsicum - 1
Onions - 3
Tomato - 2
Ginger garlic paste - 1 tbsp
Pav Bhaji masala - 2 tbsp
Chilli powder
Turmeric powder
Salt
Butter
Coriander leaves
I like to keep it simple . So I pressure cook all the vegetables with very little water. This makes it easy while mashing. In a kadai, in a tbsp of butter, cook onion, tomato, ginger garlic paste till it becomes mushy.
Then add chilli powder,salt and turmeric powder. Cook for 2 to 3 minutes.
Add the cooked vegetables to the kadai and let it cook for 5 minutes. Mash the vegetable mixture so that all comes together. Once vegetable mixture is cooked ,add pav Bhaji masala and cook for 3 minutes.
After 3 minutes, pav bhaji is ready. Just before switching off the stove, add a tbsp of butter to make it rich.
Serve it hot with pav bun , chopped onions ,lemon and coriander leaves.
We can also add chopped paneer to make paneer pav Bhaji.
Also add grated cheese to the bhaji ,to make cheese pav Bhaji.
