Mooli,carrot and mint paratha

Everyone loves a ghee laden paratha. For us south Indians we are familiar with aloo paratha,gobi paratha or paneer paratha. we also have heard of mooli paratha.
We love all variations of paratha. My son loves paneer paratha, no guesses there. All kids love paneer.
This particular day, I wanted to make a paratha with 2 or 3 vegetables. I used radish,carrot and mint.
Mixed veg paratha
INGREDIENTS:-
Radish - 2
Carrot - 2
Onion - 1
Mint - 1 handful
Atta - 2 cup
Salt
Turmeric powder
Chilli powder
Coriander leaves
In a bowl,take grated carrots, radish,onion, chopped mint and chopped coriander leaves. Add turmeric powder, chilli powder and salt.
Add 2 cup of atta to the vegetables. Mix the atta with vegetables and make it into a dough. Since the vegetables give out water,when salt is added, don't leave it to rest.
Serve it hot with curd and pickle.
Some tips
When making radish paratha, usually salt is added and left to sit for 5 minutes. Then it is squeezed to remove water. But personally I dont do that, I dont use water to make dough in this case. I just use the wet mixed vegetables to make dough.
Onions can also be avoided . I use grated onions to make it easy to roll paratha.
