Day 28 - Telengana lunch
Hi friends,
Today it is a lunch combo from Telengana. Telengana was ruled by multiple major powers of India. It is known for its wealth and historical structures. Telengana is known for its diamonds too. My father lived in Hyderabad for almost 5 years. So have travelled to Hyderabad for every vacation. Loved the hustle and bustle. As lover of beads , glass bangles and Pearls ,me and my mother were always shopping in the charminar area. It's been more than 15 years, but still we have kept everything, eventhough they were cheap trinkets. I would definitely love to go again to stock up in some more beads.
As I said in the Andhra post, I couldn't clearly demarcate the dishes . So I have decided to make lunch for telengana . I still remember the place where we had stuffed milagai bajji near my father's place. It was oh so spicy but you had to take the next bite. The next door to the small bajji place was a small shop which sold cup curd for 5 ₹.
Today I made
Same size brinjal are kept whole with cross slits and stuffed with spices. These brinjals are cooked in a gravy made with these spices. Many of the recipes required for onion and garlic. But I have used no onion, no garlic version.
Grated beetroot is cooked with tempering. No water is added. Coriander seeds, chillies and channa dal are roasted and powdered and added to it.
Ladies finger is cooked in a tamarind and jaggery gravy with spices. It is very similar to a puli pachadi.
Since it is aadi Velli today, I made all the dishes in no onion, no garlic method. I also made chakkarai pongal which is also made in telengana homes as pongali.
Hope i have done justice to the place I love and have many lovely memories.
