Day 19 - Odisha Lunch

Hi friends, 
We all loved yesterday's lunch. Today just jumped into odisha. It is famous for its tribal cultures and many hindu temples.  The temple architecture is unique and it is famous for its handlooms and handicrafts.

Odia cuisine uses less oil and less spices while remaining flavorful. Rice is the staple. Mustard oil is used a lot. There are many vegetarian and non vegetarian dishes in odia cuisine.  Since it has many temples ,there are many bhog recipes too. These recipes are no onion and no garlic .
I have taken some well known recipes to cook. If something is special,  there tends to be many variations of the recipe. I have cooked in the way which suits our palate.

Today I made

Dalma 
Dalma is a dal and vegetable stew ,tempered with panch phoron spices , turmeric powder, chilli powder, ginger,green chilly. It is topped with fresh grated coconut. 

Vegetable Besara
This a semi dry curry with mustard paste. It is mixed with grated coconut at the end. This is a dish famous in puri temple.

For both of the above dishes ,I used a mix of vegetables like yam ,raw banana ,pumpkin, radish,gourd .

Amba khatta
This is a tangy raw mango gravy with sugar or jaggery. It is tempered with panch phoron spices. It is very similar to mango pachadi.

Tomato khatta
This is also a sweet and sour gravy made with tomatoes and dates. Mango ginger is used in this recipe. I blended it .
 
All these dishes suited plain rice. It is a wholesome lunch with dal and vegetables.
