Day 13 - Bihar
Hi friends,
Today its Bihar time. Bihar has some famous histories relating to the various empires. Bihar is in my to do list for vacations.
Bihari cuisine is similar to north Indian cuisine with influences from eastern India .Generally their thali includes roti and rice. Panch phoron spices are used to flavour the food. There are many vegetarian and non vegetarian dishes. Sattu, roasted gram flour is used in many recipes. It is very nutritious.
Today I have made
When you Google Bihar , its litti chokha all the way. It is a dough ball made of wheat flour , stuffed with sattu flour and mixed with herbs and spices and baked in wood or roasted in coal. Nowadays it is baked in tava and dunked in ghee. I made it in appam pan. It takes time to cook but worth the wait.
Chokha is a mashed gravy. Fire roasted brinjal or boiled potatoes or fire roasted tomatoes are mashed with onions, salt,chillies, garlic . Sometimes all the three are mashed together to form a chutney like consistency.
I have made tomato chokha.
As already said, sattu is an integral part . It is a paratha made with wheat flour and stuffed with sattu flour and herbs and spices. It is a healthy paratha with ghee.
It is a gravy made with bathua ( paruppu keerai) and tur dal with onions ,tomatoes, ginger and garlic with panch phoron spices. I made this with arai keerai.
Though litti is made just like bati of Rajasthan , their taste is a lot different. This was in my list for so long and finally made it today for dinner. It was very yummy. Sattu paratha will be a regular at our house from now.
