Day 12 - Jharkhand Breakfast

Hi friends, 
Today it is another breakfast. This time it's from Jharkhand. I have not yet visited Jharkhand nor I have tasted its food. 

Day 12 - Jharkhand 

Jharkhand and Bihar , cuisine are more or less the same. Rice is the staple here. Usually lunch consists of roti, rice,subzi and achar. Some breakfast dishes are made of rice flour. 
I decided to do breakfast as it looked interesting.

Today I made

Dhuska
The first dish when you google Jharkhand cuisine is Dhuska. Dhuska is a deep fried bread made of rice ,channa dal,  urad dal soaked and ground batter. Chillies, jeera, turmeric powder are added before frying. When deep fried it becomes puffy and forms a pocket in the middle. It is eaten with ghugni or aloo subzi. I have not deep fried .

Ghugni
This is very common in West bengal, Bihar also. Usually this is made as a afternoon snack like a chaat. White peas are soaked and cooked in tomato puree and panch phoran spices. It can also be made in no onion, no garlic way. 

Chilka roti 
Chilka roti is very similar to a neer dosa. Rice is soaked and ground into a thin batter with salt. It is cooked on a tava like a thin dosa.

Channa dal chutney 
Channa dal chutney is so versatile. It can be had with any kind of tiffin. Channa dal is roasted in oil with onion. It is ground into a smooth paste with salt and chillies.  It can also be made with coconut instead of onions.

We all loved Dhuska very much. It will be definitely in our regular menu from now on. Channa dal  chutney is a perfect accompaniment to idlies, dosas and even phulka.
