Aloo lobia subji- Potato and black eyed peas

A very good day to you all. In our family, we love to eat phulkas for dinner. Atleast 3 days we would definitely have phulka and subji. We cant be having heavy subjis everyday with paneer, cream or fried vegetables. Even when we google recipes, lots come with rich ingredients. My patti used to make phulkas everyday for my thatha and never she used any onion or garlic or paneer or cream. So I am used to that kind of cooking where less ingredients made more sense and tasty food.
I use a lot of beans like chole,rajma,black eyed peas( karamani), green gram in my cooking. I also make dals and vegetables when I make phulka. We love black eyed peas as it goes very well with ghee phulkas.
INGREDIENTS:-
Black eyed peas (karamani) - 200 gms
Potato big - 2
Onion big - 1
Tomato - 1
Ginger garlic paste
Salt
Chilli powder
Turmeric powder
The ingredients used for these are available in every household easily.
Soak the karamani for 2 or 3 hours in warm water. I usually soak the vegetables in warm water as it soaks well and fast.
Cook the karamani in pressure cooker for 3/4 whistles with salt and turmeric powder.
In a pan take oil. Temper jeera and add finely chopped onions. Once onions have changed colour, add tomato and garlic and ginger paste.
Fry for 5 min till tomato gets mushy. Once the masala is cooked add the cooked karamani and potato. Add chilly powder to it. Let it boil for 5-10 minutes.
Once it all comes together, switch off the flame and serve it hot with phulka or rice ,garnished with coriander leaves.
I have not added garam masala. Sometimes I add homemade kitchen king masala to it. We can add any masala powder If needed.
