Protein rich vegetable ragi adai

Its june now. I hope and pray God for everything to become normal soon.
Today I decided to make adai. In our house every week some kind of adai will definitely be there . We don't usually need side dish for that. Happy with jaggery or idly podi.
Ragi is the one thing we all hated initially. But slowly I found out some recipes which were to our liking and now we have come to a situation that we are excited about ragi.
INGREDIENTS:-
Ragi flour :- 2 cups
Tur dal :-1/3 cup
Urad dal :-1/3 cup
Channa dal :-1/3 cup
Red chilly :-6
Hing
Salt
Mixed vegetables :- 1 cup
Curry leaves
Coriander leaves
Soak the three dals in water for 45 mins to 1 hour. Once it is soaked, grind it in the mixie to a coarse paste with chilly, hing, salt. Add the ragi flour to the ground dal paste . Mix it well . Add water to adjust the consistency. Leave it aside for 15 minutes .
After 15 minutes, add mixed vegetables, curry leaves and coriander leaves. Mix well and adjust the consistency with water.
Batter is ready. Pour the batter on hot dosa tava and spread it like normal dosa. Once it is cooked on both sides, serve it hot with chutney, idli podi, Jaggery.
Tips
I have added equal proportion of dals. So it will be soft . If you prefer crispy adai, reduce the amount of urad dal.
In this recipe, I have added 1 carrot,1 onion and half a capsicum.
We prefer podi for this recipe as I have used only less chillies.
It is a weeknight dinner. It is a filling one.
