One state one day - Day 1 J&K

Hi friends, 
After a week , I have come with a new concept for this blog. When your kid and your husband are busy in their own worlds, you are a bit bored. I am in the same situation now. We are always cooking in the kitchen, so I thought why not learn and explore something in the kitchen which I have not done before. 
When looking at some blogs, YouTube channels, I came to know that some of the bloggers have done 30 days challenge where they have dealt with the cuisine of each state/ region on a daily basis. 
That's my inspiration. I have decided to cook mini thali from each state every day. 
I have not gone to many places nor I have tasted many of the dishes. Still I wanted to try everything. These dishes may not be accurate in all the sense, but it is a learning experience. 


Day 1   Jammu and kashmir mini thali

Today being the first day, I am starting with Jammu and kashmir.  Everyone, wherever from India, will have kashmir in their vacation bucket list. I am waiting too.
When coming to the cuisine, I assumed that there are just non vegetarian dishes. But when I decided to read about it, I came to know of many vegetarian recipes that was made everyday at home.
Today I have made

Haak/haaq     - Greens subzi

They are made with kohlrabi greens. It is basically a stew which is had with rice.
I have made this with araikeerai/ amaranth leaves.

Kaliya chaman- yellow paneer 

Chaman is paneer. Shallow fried paneer is simmered with spices in milk and turmeric. 

Tomato chaman - Red paneer 
Shallow fried paneer is simmered with spices in tomato and red chili powder slurry.

Muj chatin- Radish raita
Grated radish is mixed with yoghurt and chopped green chilly. 

Tchok muj- Sour radish curry 
Shallow fry chopped radish and simmer with spices  in red chilli powder and tamarind slurry. 

Tahar- Yellow rice
Cook basmati rice with saffron  or turmeric powder. 
This rice is made as a thank you offering to God. 


I was totally surprised to see onion, garlic , tomato not used a lot.
The spices I have used here are jeera, hing, cardamom, clove, ginger powder, sombu powder.  
Hope I have done justice. I  am still learning and will try to improve definitely.

    Excited about your challenge, as we can also have some learning 🥰.. All the very best! The only biggest challenge upon everything is we should have 2 or 3 plp at home to try d taste new food recipes... 😃
