Day 5 - Arunachal pradesh
Hi friends,
Today we start with 7 sisters of north east states. First in the list is Arunachal pradesh.
Arunachal pradesh has the largest number of tribe population in India. The lifestyle and culture of each tribe varies. They grow organic vegetables and fruits and they eat organic.
The cuisine of Arunachal is similar to all north eastern states. They use very minimal spices and use lot of bamboo shoots in their recipes. They are predominantly non vegetarian but could find out some vegetarian recipes. Rice is the staple there. They use a lot of chillies and fermented cheese in their cooking. Butter tea is their go to beverage in the winter season.
Today I have made
Zan is a porridge made with ragi flour,meat or vegetables with ginger, garlic. It is similar to our own ragi kanji. I added carrot and onion to it.
Kharzi is kind of a pulao. Cooked rice is mixed with a paste of soaked chillies, garlic, tomato and fermented cheese and cooked in the pan for few minutes. This also has spring onions. I used processed cheese to make this.
Khura is a buckwheat pancake made with chang ( local alcohol). I made this with wheat flour ,salt and water.
Thenthuk is a variation in thukpa . Vegetables are boiled in water with ginger,garlic, chillies with a tsp of soya sauce and tomato puree. Handmade flat noodles are added to the boiling soup.
Noodle soup is called thukpa.
There were many recipes using bamboo shoot. I didn't try any. Fermented cheese is not available here so used processed cheese. Even mozzarella can be used.
Momos are also famous here. Since I made it for sikkim ,I didn't do it again.
I would love to try the original versions as I have made some changes.
