Simple instant snacks

All over the world we have some kind of lockdown and restrictions owing to coronavirus. Our brain knows the seriousness of these problems but our minds wander in a different direction. It wants to keep itself so occupied that these things don't affect it. Because of this reason people all over the world are doing something or the other to keep themselves occupied. One such activity is cooking. The one thing that I learned from this lockdown is we can cook anything with limited resources if we had the interest. Today I have come with two instant snack varieties. Both can be used as after school snacks too.
First is instant paniyaram
Usually paniyaram is made with rice and u.dal batter. I make paniyaram with leftover dosa batter. But when we don't have time and when we don't have dosa batter ,we can make
in this method.
INGREDIENTS:-
- Rava :- 1 cup
- Curd :- ½ cup
- Onion :- 1 chopped fine
- Ginger :- small piece chopped fine
- Curry leaves :- few
- Green chillies :- 2
- Mustard seeds :-1 tsp
Take rava and curd in a bowl and mix it well. Leave it to rest for 10-15 minutes. After rava absorbs curd add onion, chillies, ginger, salt, curry leaves and mix well. Temper mustard seeds in gingelly oil and pour in the batter. Now beat the batter well to bring it to a pouring consistency.
In an appam pan pour a tbsp of gingelly oil and pour the batter and fry. Once its cooked both sides serve it with chutney or even tomato sauce works just fine.
Second is a sandwich. In all iyengar bakeries in Chennai we can see a toast with a whole lot of onions and tomatoes. Even now it is available in small bakeries. This is the most easy version .
Take a kadai. Temper mustard seeds, jeera, a little ginger,2-3 cloves of garlic in a tbsp of oil. After that add Finely chopped 1 onion, 1 tomato ,half a capsicum, a small grated carrot. Fry all the vegetables with salt, chilly powder, garam masala, chaat masala. After 2 or 3 minutes switch off the gas. We need vegetables to be crunchy. Toast bread with butter and spread this vegetables on the bread. Serve it with masala tea or hot filter coffee.
