Rainbow paratha

Hi everyone, 
We all love colours. We want it everywhere around us. Even if we see a plate of food with various colours, we tend to get attracted to it. Actually eating is an important action where we use all the senses. First we hear the food cooking, then we see the food, then its aroma hits us ,then we touch the food , taste it and be happy.
 
Its very important for the food to look great. Only then kids will come forward and taste it. 
All the kids like phulka or chapati, but most of them just eat it with sauce or sugar . Just because they don't like the look of the vegetable.

So here I come with a unique recipe which also is healthy and comes with natural flavor of the vegetables. 

Here I have used 5 colours. 
Let me tell you how I made those 5 colours.

Red colour 
Steam 1/2 beetroot and cook it till tender. After cooling, blend it well in the mixie. Strain it to get into a fine paste.

Orange colour
Steam 1 carrot and cook it till tender. Blend it into a very fine paste. If needed, strain.

Purple colour
Boil a quarter of purple cabbage in little water. Once its cooked and cooled, blend the cabbage with the boiled water and strain it to get fine puree.

Green colour
For this, sky is the limit. We can use any green leafy vegetable. Cook this in water and blend it into puree. I used mint for this.

Yellow colour 
I used turmeric  since it is a savoury dish. 

Tips
All these colours are natural and can be used for any savoury or sweet dish .
We can also use these to colour our cakes, idly, dosa, rice.
The puree can be stored in a ziplock pouch for a week in the freezer except greens.
Greens tend to lose colour in the freezer.

Rainbow paratha
INGREDIENTS:- 
Atta                           :- 1 cup
Salt                            :- to taste
Water 

For red dough
Take the beetroot puree in a bowl. Add little salt and chilli powder . Add flour little by little till it forms into a dough. No need to add water.
For orange dough
Take carrot puree, add salt ,chilli powder. Add flour till it forms a dough.
For green dough
Take green puree and blend it with 1 green chilli and salt. Mix the flour to this till it forms a dough.
For purple dough
Take cabbage puree, salt and chilli powder.  Mix flour to form a dough. 
For yellow dough
Just mix salt,turmeric powder, flour and water into a dough.

Once all your dough are ready, you can see that it will be sweet lime sized dough.


To get the effect of rainbow paratha,

First roll each dough into a big chapati. 
Make sure they are all equal. 
Place coloured dough on top of each other.
Finally it will be 5 layers of coloured chapati.

Now roll the layered chapati into a log.
Cut the log into equal sized rolls to make rainbow paratha.

Just take the small multicoloured piece and roll into a paratha.

Cook in a pan until both sides are cooked.
Spread ghee when the paratha is hot.


Yummy ,colourful rainbow paratha is ready. 

Some tips
Any spices ,onion, garlic,masala can be used if wanted.
I didn't use any as I wanted the flavour of the vegetable to shine through  
These paratha can be had with Raita, curd and pickle or dal.

Kids will love the colours.
