Mini mangalore bonda

How is your weekend. Hope everyone is having a nice day. In the lockdown period, we have been making so many different food items that we have been learning. We try to cook what we had a long time back. In the same way, I was also planning to make mangalore bonda for a long time. Once when we went to sringeri and dharmasthala ,the roads were very bad at that time and we had a very long drive in cab. All of us were fed up and tired ,so we asked our cab driver to stop somewhere for tea.The driver stopped at his usual place and suggested this bonda. The bonda was tasty and it was not like anything we had had before. From that time I have been planning to make it. Finally I made it and took a picture too.This is not an instant variety. It needs a little bit of planning.
Mangalore bonda
INGREDIENTS:-
Maida :- 1 cup
Rice flour :- 1/4 cup
Sour Curd :- 1/4 cup
Onion :- 1 finely chopped
Green chilly :- 2
Curry leaves :- few
Ginger :- a small piece chopped finely
Salt :- to taste
Mix maida, rice flour, curd ,onion, ginger,green chilly ,curry leaves in a bowl. Mix it well till it becomes a thick batter, thicker than idly batter.
Then keep it aside for 2-3 hrs to ferment.
After 2-3 hrs ,take small balls of batter and deep fry in oil. Serve these hot with coconut chutney.
Some tips
Add grated coconut or small coconut pieces in the batter before frying.
Fermentation depends on our taste buds. You can ferment for more hrs or less.
Add a pinch of baking soda to the batter before fermentation to make it fluffy.
