Dalgona coffee cake eggless

Hi people,

Now we have come to a time where everyone is baking cakes. 13 years back I baked a cake for the first time and it was ok. Not great, not bad. Wanted  to go to some baking classes where I can learn eggless baking. Classes were too expensive and more than that I had to travel everyday around 15-20 kms. Didn't think that was necessary then. So I decided to do it on my own. So I Invested in a lot of books and an otg. Everything was ready but I was not. Life took over, routine took over.


Last year, One fine day my otg broke down. I threw it out. After many deliberations I decided to buy a microwave.

Finally I invested in a combination microwave. Now I have started researching books, websites, videos and finally have some recipes that suit our taste. Happy that now there are  many recipes available relating to eggless baking, vegan baking etc. I have started experimenting different flavor combinations. Some are too good, some does not work.


 At this point I have to say that I have a wonderful family who encourages me to do whatever I want to do. Whatever I cook, there is  always appreciation ,no matter what, from my mother and son and  honest feedback from my husband and father. So it is always balanced. Apart from family, I have friends who are like family to me. One such person is Saipriya and her family ,without whom I would not have learnt many things. She is the one great encouragement behind all the cake baking.


Today, I bring to you,  coffee cake with dalgona coffee frosting which I made for the occasion of priya's parents anniversary. 



INGREDIENTS:- 

  • Maida                          :- 1 1/2 cup
  • Powdered sugar          :-¾ cup
  • Cocoa powder             :- ¼ cup
  • Milk                              :-1 ½ cup
  • Oil                                :- ½ cup
  • Instant coffee powder  :- 3 tbsp 
  • Sugar                           :- 5 tbsp
  • Baking powder             :-  1tsp
  • Baking soda                 :-½ tsp

First preheat oven at 180°. In case of using tava on gas preheat iron tava for 10 minutes. 


  • Let's make coffee first. In 1 cup of lukewarm milk add 1 tbsp of coffee and keep it aside.
  • For the cake, mix 1.5 cup of flour, 3/4th cup of powdered sugar, 1/4 cup of cocoa ,1 tsp of baking powder and ½ tsp of baking soda and mix well. After the dry ingredients are mixed well add ½ cup oil and 1 cup of coffee that we made earlier. Mix the batter using cut and fold method. Don't overmix.
  • Once cake batter is ready, pour the batter in greased cake pan and keep in the oven or on the tava. To grease the cake pan brush it with oil and sprinkle maida .
  • In the oven ,keep for 35-40 minutes in 180°.
  • In the tava keep it for 40 minutes in medium low flame.
  • Check whether the cake is cooked by inserting a skewer or a knife. If its cooked it comes clean. Let the cake cool.
  • In the meantime, beat 2 tbsp of coffee powder, 4 tbsp of sugar,2 tbsp of water well to make it frothy .We are going to use this as dalgona frosting. 
  • In half cup of milk, mix 1tbsp cocoa powder and 1 tbsp sugar. This is the chocolate syrup which we are going to pour in the cake .
  • Now to assemble, cut the cake and level it. Now poke small holes in the cake and spread the chocolate syrup with spoon. Once the half cup of chocolate syrup is absorbed by cake leave it for 15 minutes in the fridge.
  • After that spread the dalgona frosting on top and sides of the cake. 
  • Decorate the cake as you want it. I created a wave pattern with chocolate syrup.
  • Coffee cake with dalgona frosting is ready.
