Colors of lemonade

Hi everyone ,
Hope everyone is safe at home. It is agni natchathiram now. That means it is even more hot in Chennai. Last week I had shared some traditional summer drinks. Today I am going to share some drinks using lemonade squash made at home.
Lemonade squash
INGREDIENTS:- 
  • Lemon:- 10 medium sized lemons
  • Sugar :- 500 gms
  • Water :-2 cup

In a pan add water and sugar.let the water boil and sugar dissolve. Get the sugar solution to be slightly sticky. Let the solution cool down. Once it cools down strain the sugar solution in a thin towel to filter impurities. 
Cut the lemons in half and squeeze the juice out of 10 lemons . You can strain these too to remove any small seeds.
Once sugar solution is cooled down add lemon juice and a pinch of salt.
Keep it in a bottle in the refrigerator. It will stay good for 2 weeks. 

Now we will see some variations 
Lemonade
In a glass ,take a few tablespoons of the squash. Add the required water and ice cubes and serve.

Lemon mint cooler
Crush handful of mint leaves in the blender with a little water. Strain this into a glass. Add the squash,water,and ice cubes  and serve. My son loves this very much.

Ginger lemon cooler
Crush a small piece of ginger in the blender with very little water. Strain this into a glass. Add few tbsp of squash, water,ice cubes. Serve chilled.

Strawberry lemon juice 
I had a strawberry syrup that I had made when I got strawberry.  Just cook some strawberries with few tbsp of sugar in pan. Once cooked and cooled blend it into a smooth puree. 
Add few tbsp of strawberry puree made in a glass. Add few tbsp of squash, water,ice cubes. Serve chilled .

Masala lemonade 
It is made just like a normal lemonade. Before serving add 1/2 tsp of chaat masala. 

Lemon soda
Instead of adding water to the lemonade, add soda and flavour it according to your liking.

SOME TIPS
Instead of adding white sugar, we can add brown sugar or jaggery. 
For sweetness totally we can avoid sugar and add fresh honey to it.
If using honey no need to boil .Just mix with lemon juice. 

Pickle
My mother makes great pickles. One of it is lemon pickle. Usually we combine both of these things. 
Once lemon is squeezed and juice is taken, please don't throw it out. It may still have some flesh left. We cut the lemon into small pieces add salt to it and leave it for a day or two. Lemon  will soak in the salt.
After that we use it either as it is as uppu elumichai or add chilli powder  and use it as pickle.
We try not to waste anything to the maximum.
