Colorful gems called tutti frutti

Hi everyone, 
As we are all experimenting various recipes, sometimes we come to an ingredient that we don't have and some we don't get nearby.
I wanted to try fruit bread and tutti frutti cake for a long time, but the main ingredient was not available.  Then I got the recipe of making tutti frutti from papaya. Again ,we don't eat papaya. I know for some it may be a shock. But with a firm decision, I searched a lot and found out this particular method. I must say it is really very tasty. The watermelon rind - the white part between skin and flesh  is what we are using today. I used rind of half a watermelon and got 2 cups of tutti frutti.
 
Let's jump into the recipe 
INGREDIENTS:- 
  • Watermelon rind :- 3 cups finely chopped 
  • Sugar                      :- 2 cups
  • Water                     :-2 cups
  • Food colors            

It's just so easy to do. First cut the rind into very small cubes and boil it in water for 10 minutes. 
By this time the rind would have cooked. Keep it aside. Take sugar and water in a pan and boil for 10 minutes. After sugar melts and it has become slightly sticky  switch off the gas. Add cooked rind. Close the vessel. After it cools down ,take cooled ,soaked rind and put in a small bowl with your favorite color along with the syrup. 
I left it overnight for them to soak. Next day morning I filtered the rind pieces and  kept it to dry in sunlight for full day. At this time the pieces shrunk a little.  If needed, we can dry it in sun another day too. As soon as the pieces are dry, store it in a closed container. 
I didn't have many food colors in pantry. I had strawberry color,kesari, yellow. So I have used only those. You can use any color. In fact we can even make rainbow tutti frutti. 

We all loved it as it is . I am planning to make a cake with tutti frutti. Hope you will all try this.
