30 second eggless mayo and simple cream cheese

Hi everyone 
A happy weekend to you all. While shopping today for groceries, I found a packet of bun . Suddenly got idea to make veggie burger. 

Came home with a thought of doing it. But I was out of mayo and cheese. Again didn't want to go to store to buy at this lockdown time. So I decided to make these with ingredients at home.

Sometimes there are things that are so simple that we feel why we didn't do this all these days.

Let's get to the recipe 
30 second eggless mayo
INGREDIENTS:- 
Refined oil         :-1/2 cup
Cold milk            :-1/4 cup
Salt                       :- to taste
Sugar                    :- 1 tsp
Lemon juice       :- 1 tsp

In a chutney jar, add all the ingredients and pulse it for 5 seconds.  Your mayo is ready. 

Shocked ,me too. It's as simple as that. You can add garlic, chilli flakes to it before pulsing for added flavour. Chilled milk is essential. It can be stored for 2 weeks time. 

Cream cheese 

Cheese is made with curdled milk. Same is paneer. So making cheese is similar.
Cream cheese as the name suggests is creamy. It's not easily available nearby and it is expensive. 
This is the cheese used for cheesecake and when done with full fat milk it's very creamy and rich. We also will get a good amount of cheese.
I had only blue packet aavin milk. Its fat content is really low. So I got only a small cup of cream cheese out of a 1/2 ltr packet. 
INGREDIENTS:- 
Milk                        :- 500 ml
Lemon juice          :-2 tbsp
Take milk in a heavy bottomed vessel and simmer it. Once it starts boiling keep the flame to medium low and add lemon juice little by little. You can see the milk curdling. Once it curdles,switch off and drain the curds from  whey. As we all know, this is paneer. 
For making cream cheese, we leave that to drain for 15 minutes.  Once all the whey is drained, take the cheese curds in the blender with a little salt and blend it for 10-15 seconds till its creamy. 
Cream cheese is ready. 
Again it's so easy . While blending we can add any flavour to it to make it flavoured cream cheese. It can be stored for 10 days in fridge. 
The whey or water that is drained is very healthy. Please don't throw it. You can use it for making dough , subji .
