Day 14 - Uttar Pradesh

Hi friends, 
Hope you have enjoyed jharkhand breakfast and bihar dinner . Today we have reached uttar pradesh. Uttar pradesh has a huge role in Indian history. U.p has two world heritage sites and ranks first tourist destination in India. U.p has many historical, natural and spiritual tourist destinations. 

Day 14 - Uttar Pradesh 

Uttar pradesh is famous for its awadhi cuisine and mughalai cuisine. Being a large state ,it share its cuisine with neighbouring states. Staple is roti, subji ,achar, dal. It has yummy vegetarian as well as non vegetarian dishes. 

Today I have made 

Gobi Musallam 

Musallam means entire or whole. I have made this dish with entire gobi . Half cooked Cauliflower is marinated in the underside with green chutney. Then cauliflower as a whole is cooked in a yoghurt gravy with onions, tomatoes, garlic, ginger, turmeric powder, chili powder, roasted cumin powder, roasted coriander powder and garam masala.  It is a wonderful centerpiece in a dinner party menu. It is so flavorful that just a roti will be enough.

Bhindi ka salan 
Bhindi ka salan is a yoghurt based gravy with tomato, onion, ginger, garlic and usual spices. It is different from Hyderabadi salan as it does not have coconut or sesame seeds.

Tehri pulao
Tehri is a yellow rice flavoured with spices and it is a part of awadhi cuisine. Sometimes vegetables are added. I have added potato,carrot and beans to it. It is made with whole spices , onion and a little bit of yogurt.  It is finished with lemon juice. 

I completed the thali with some phulkas.

It is a good lunch that can be had on special days.
